Roasted Potatoes FLIPPED Potato and Egg Breakfast Burritos
It's dinnertime, you have a fridge full of leftovers, how do you make them appetizing, again, to your fickle family ... FOOD FLIP them.
Just had a dinner party? Have extra roasted potatoes?
Wow your family with easy-to-make breakfast burritos the next day.
WHATCHA NEED:
oil
tortillas
potatoes
salsa
eggs
salt, pepper
WHATCHA GOTTA DO:
Heat oil in a pan. Add potatoes and salsa. When salsa starts to bubble, add whisked eggs. Sprinkle with salt and pepper, to taste.
Once the egg mixture is cooked to your desired doneness, warm tortilla in a microwave for 20 seconds. Add a few tablespoons of the potato/egg mixture to the tortilla, wrap and enjoy!
Have *fun* with this recipe, add left-over veggies, too! Make a few TO GO, wrap in foil, and hand them out to the kids or the hubby ... or yes, even YOU to eat in the car! We call them Minivan Picnics!
