According to Ann M. Forella, vice president of Asset Management for Buie Stoddard Properties, new owners Michelle and Paul Hamilton have signed a lease to take over the former 4,000 square-foot space.  In fact the new owners didn't waste time as the renovations have begun. Laguna Niguel Patch photographer Barton Mac Leod was at the site Tuesday. The scope of the work includes new flooring, paint, restroom renovation, new HD flat screens installed, and more Forella said.

The Hamiltons currently own and operate another sports bar in Huntington Beach on Beach Boulevard.

"The new sports bar will be renovated and it will be a fun and lively venue to view a wide variety of sports in a comfortable, neighborhood setting," Forella said.

New co-owner Michelle Hamilton, said, "We are very excited about our new venture as we live in Dana Point and this will be 10 minutes from our home. We use to go to Draft Choice in the 90s when we lived at The Bluffs (now Monarch Coast Apartments). We are striving for a July opening."

"Signature Sports Bar and Restaurant will be a premier location for sports, camaraderie, a good drink, a cold beer and a great meal. We strive to be that rare establishment that provides an unparalleled immersive experience for sports fans while still maintaining a welcoming neighborhood pub atmosphere," she said. "Our company's aim is to keep our concept fresh, exciting and on the cutting-edge of the sports entertainment industry through a continued program of improvements and upgrades."

As Forella previously mentioned, Hamiltons said there will be extensive renovations and upgrades.

"We are creating a new bar layout and enhancing the restaurant area, kitchen and restroom facilities. There will be high and low top seating, new décor and of course, new flooring and paint. We are deep cleaning and sanitizing from top to bottom."

Expect the neighborhood place to be "a sports bar with taste."

"Our collaboration with celebrity Chef R. Vincent Guccione will continue at our new location. As our executive chef consultant, Chef Vince has created a new direction; everything from the way food is purchased, prepared and presented has been upgraded. Chef Vince contacted friends who are owners and Chefs in sports bars in Chicago, New Jersey and Cincinnati, and incorporated their bestselling dishes into our menu," Hamilton said.

For example, they now make almost all dressings, pizza sauces, salsas, and more fresh every day. They also have less frozen and fried items, and feature salads and items made from scratch daily. Many items are less than 400 calories and low in fat.

Guccione is the celebrity chef and host of Your Personal Chef on CBS affiliate KPSP Channel 2 in the Coachella Valley. He has a Friday radio show on News Talk 920AM KPSI. He was also a private chef to author Sidney Sheldon and Frank Sinatra among others.
